I had a dream about chocolate croissants so I had to make them! ;p

They were soo good and yummy! We had them for breakfast today and it felt luxurious! ;p
Anyway yesterday I run for 30 minutes 2 minutes run, 30 seconds walk. I was very happy with my progress. I am getting so much stronger. I am not sure what I want to increase by next, 30 seconds or 1 minute? Idk yet, but I will let you know what I decided next time.
I went gluten free for a week!
I thought I was maybe gluten intolerant so I cut out gluten and I kept a good food journal and found out it was actually soy lecithin which is a common emulsifying agent because it is both hydrophilic and lipophilic, meaning it likes water and fat.
Anyway, nothing remarkable happened I kept getting sick because I didn’t realize I was still eating the wrong thing. It was hard but doable to go gluten free.
Also now that I can eat gluten again I appreciate it that much more! As a baker, gluten really is a beautiful thing!
However, reading ingredient lists and finding that gluten is in everything makes me concerned that even if you don’t have an allergy you could develop one just because you are exposed all the time. Idk…
So take home lesson for me is choose when gluten is important and enjoy it but if it’s not something that should be in it, such as beef base or soy sauce opt for gluten free or make from scratch and skip out on all the extra ingredients wreaking havoc on your body like soy lecithin in my case…
Anyway, I have some fun gluten free bread recipes!!! Keep an eye out for it, coming soon!
